Today, I am going to share with you Japanese side dish. 🙂
- 200g (7.0 oz) of eggplant
↓Seasonings
- 3 tablespoon of mentsuyu
- 3 tablespoon of water
- 1 tablespoon of mirin
- 1 teaspoon of grated ginger
- Green onion
- Dried bonito (Dried bonito which is shaved into thin flakes. It is used to flavor other foods or as a base of Japanese soup.)

↑This is Mentsuyu (Udon noodles sauce). Mentsuyu is a Japanese flavoring sauce made mainly from dashi stock, sugar, mirin or sake and soy sauce. Very useful sauce. 🙂
Cut the eggplant in half. Then slitting them like this.
Soak the eggplant in a water for 5 minutes. Then paper dry.
Spread 3 tablespoon of oil a heated frying pan. Cook both side for about 10 minutes. (Middle heat)
Eggplant getting soft.
Mixed all seasonings. Add seasonings in a frying pan.
Add 1 tablespoon of mirin. Cook for about 3 minutes. (Low heat)
